Apple & Berry Crumble

Fruit crisps & crumbles are the kind of desserts I am almost always craving. They’re easy to whip up with whatever fruits are in season, from Summer berries to pears & everything in between! As easy as they are versatile, crumbles take little hands-on time & can easily be doubled or tripled for family gatherings & dinner parties. 

This Apple & Berry Crumble is the ultimate combination of flavours & textures for that perfect fruit-to-crips ratio in every bite! Warm tangy stewed fruits topped with and a crisp salty-sweet crumble & served with a dollop of yogurt or melty ice-cream, there’s nothing quite like it. Enjoy!

NUTTY CRUMBLE TOPPING

150g of almonds*

100g of gluten-free old-fashioned oats

2.5 tablespoons of coconut oil

80ml of maple syrup

1 teaspoon of ground cinnamon

1-2 pinches of fleur de sel

Place the almonds in a mixer and blend until a flour forms.

Add the almond flour to a mixing bowl with the oats. Stir to combine.

In a small pot, add the coconut oil, maple syrup, cinnamon and fleur de sel. Melt over low heat, while stirring gently.

Once the mixture is homogenous, pour it over the dry ingredients and stir until fully coated. Set aside.

Notes: *Alternatively, you can also use ground almond powder or almond flour.


APPLE & BERRY FILLING

6 red apples*

1 teaspoon of fresh ginger, peeled & grated

1 teaspoon of ground cinnamon

1 tablespoon of maple syrup

400g of berries**

Preheat the oven to 160°C.

Peel the apples and remove the core. Cut them into small wedges.

Place them in a pot with the grated ginger, cinnamon, maple syrup and enough water to cover the bottom of the pot (approx 1cm).

Cover and leave to simmer on low heat for 10-12 minutes, until the fruit is nice and soft.

Gently transfer the stewed apples to an oven-proof dish with the fresh berries. Layer the crumble topping above it.

Bake in the oven for 20-25 minutes, until the top is golden brown.

Remove the crumble from the oven and leave to cool slightly before serving with a dollop of yogurt or a scoop of ice-cream.

Notes: *I like to use a mix of Pink Lady & Honeycrisp apples, but feel free to play around with different varieties of fresh & crisp apples.

**Use a mix of berries to your liking - i.e: blackberries, blueberries, raspberries, currants, etc. Alternatively, you can use frozen berries.
