Celeriac Steaks with Olive Salsa

A Green Christmas (2021)

One thing I love about the festive season is the traditions we have built over the years. 

  • we all cosy-up in our Christmas jumpers for a joyful start to the day

  • my father brings out his Rudolph tie that lights up & sing’s at the touch of a button (the sound has faded over the years, but he insists on wearing it)

  • we leave our slippers or shoes at the bottom of the tree for gifts

  • we sing together before unwrapping presents one by one (a slow but magical moment), cherishing the look of joy in everyone’s eyes

  • & finally, we gather with family & loved ones around a delicious and warming home-cooked meal

This year’s 'Green Christmas 2021’ menu is filled with flavoursome & unexpected recipes to delight all of your guests’ tastebuds without having to spend hours in the kitchen: more time to celebrate & enjoy the company of loved ones.

This year’s ‘Green Christmas 2021’ main event features meaty celeriac steaks served with a deliciously-tangy green olive salsa. The golden & crisp outside gives way to a smooth & rich inside in these Celeriac Steaks with Olive Salsa. And with a drizzle of fresh and zingy olive salsa to top it all off, you have the perfect vegan main for your festive feast!

- Vegan Recipe -

OLIVE SALSA

1 teaspoon of Dijon mustard

1 tablespoon of balsamic vinegar

1 tablespoon of apple cider vinegar

2 tablespoons of extra virgin olive oil

100g of pitted green olives

2 teaspoons of capers

1 bunch of fresh flat-leaf parsley

1 bunch of fresh basil

1 teaspoon of lemon juice

Zest of ½ lemon

Fleur de sel

Freshly grated pepper

Wash and gently pat dry the parsley and basil leaves. Finely chop them & set aside.

Finely chop the green olives and capers & set aside.

In a bowl, mix the mustard with the balsamic vinegar, apple cider vinegar & olive oil.

Add the olives, capers, parsley, basil, lemon juice & zest into the bowl & mix.

Season with salt & pepper to taste.


ROASTED CELERIAC STEAKS

1 celeriac

2 tablespoons of olive oil

Sea Salt Flakes

Freshly grated pepper

Handful of grains/ nuts, toasted (optional)

Preheat the oven to 180°C.

Wash and dry the celeriac.

Cut the celeriac into thick slices, approx. 2cm thick.

Place the slices onto a baking tray lined with parchment paper.

Brush the steaks with olive oil and season with salt & pepper.

Bake in the oven for 20-25 minutes, until cooked & golden-brown.

Remove the celeriac steaks from the oven and place in a serving dish.

Garnish with the green olive salsa & top-off with a handful of toasted nuts or grains of your choice.
