Roasted Cauliflower Steaks (Copy)

Eating out at a restaurant, sipping a coffee on a ‘terrasse’, weekend breaks & summer, so many delightful prospects ahead… In the meantime, rejoicing about new and delicious recipes made with love at home is the perfect way to bring lightness and joy into your households. And with Easter just around the corner, why not give your traditional family meal a little twist this year!

My Roasted Cauliflower Steaks are as simple to prepare as they are delicious! In this recipe, the cauliflower pieces are brushed with a mixture of extra virgin olive oil, smoked paprika, salt, pepper and some sriracha sauce before being roasted in the oven. They are served on a bed of creamy chickpea hummus, but as always you can change it up a little by switching the chickpeas for cannellini beans.

This dish is vegan and a guaranteed crowd pleaser! You can even play around with the spices and other veggies in the same way: why not give celeriac steaks a go or even cabbage.

- Vegan Recipe -

ROASTED CAULIFLOWER STEAKS

1 large head of cauliflower

5 tablespoons of extra virgin olive oil

2 teaspoons of smoked paprika

1 teaspoon of ground coriander

2 teaspoons of sriracha sauce

Fleur de sel

Freshly grated pepper

Preheat the oven to 200°C.

Remove only the toughest outer leaves from the cauliflower, leaving the tender inner leaves.

Cut the stem of the cauliflower to create a flat base.

Place the cauliflower upright on stem and slice into 4 to 6 slabs to form steaks.*

Place the steaks and florets onto a baking sheet lined with parchment paper and brush them with the mixture of olive oil, smoked paprika, coriander and sriracha sauce. Set the remaining mixture aside for after cooking.

Season with salt and pepper.

Bake in the oven for 25-30 minutes, until turning golden.

Remove from the oven and brush with additional oil and spice mixture, if desired.

Serve on a bed of creamy chickpea hummus (recipe here) and top-off with a couple of toasted sesame seeds and fresh aromatic herbs of your choice.

Notes: *The amount of slices can vary between 4 to 6, depending on the size of the cauliflower head & the thickness of steaks desired.
