Roasted Red Pepper Dip
All throughout the Summer months, our family home in the South of France sees friends & family come & go. Lots of laughs, great company & delicious food all around is what makes these moments so special. And of course, let us not forget, one essential ingredient, that truly makes it feel like Summer: the famous French apéritif!
I like mixing it up & trying new recipes & flavours combinations, to keep things fun & fresh, but we all know a good classic dip is where it’s at! They’re quick & easy to make & work like a charm every time! Smoky Aubergine Dip, Roasted Red Pepper Dip & Chickpea Hummus are my go-to trio when looking to impress my guests.
The bold flavours & colours in this Roasted Red Pepper Dip go perfectly served alongside some homemade Pita Bread - a true match made in heaven ! Enjoy!
- Vegan Recipe -
ROASTED RED PEPPER DIP
3 red bell peppers
50g of fresh bread
35g of walnuts
½ tablespoon of honey*
½ tablespoon of balsamic vinegar
1 clove of garlic, peeled
1 teaspoon of lemon juice
2 tablespoons of extra virgin olive oil
½ teaspoon of chilli flakes
1 ½ teaspoons of smoked paprika
Fleur de sel
Freshly grated pepper
Preheat the oven to 230°C.
Wash the bell peppers and place them on a baking tray lined with parchment paper.
Roast in the oven for 20-25 minutes, flipping halfway, until lightly blackened on each side.
In the meantime, add the bread to a mixer and mix into fine breadcrumbs.
Remove the peppers from the oven and place into a large bowl. Cover with cling film to steam for 5 minutes.
Peel the peppers with your hands and discard the skins. Remove the stem and seeds and also discard.
Roughly chop the peppers and add them to a mixer.
Add the breadcrumbs, walnuts, honey, balsamic vinegar, garlic, lemon juice, olive oil, chilli flakes and paprika to the mixer. Mix on high for a couple of minutes, or until mostly smooth.
Season with salt and pepper and blend again until the mixture is completely smooth.
Reserve in the fridge for 30 minutes or until ready to serve.
Notes: *For a vegan alternative, you can sub the honey for maple syrup or agave syrup.
