Sesame & Fennel Seed Cracker's

 
 

You’ll never go back to a store-bought version once you’ve tried these flavoursome Sesame & Fennel Crackers! Speaking of flavours, we love our crackers seasoned with sesame, ground fennel seeds and finished with flaky salt - but do play around with various herbs, spices and seeds to change things up a bit.

Ultra thin & crispy, they are the perfect snack all on their own. Feeling a bit more peckish? Slather-on some delicious homemade dips - tapenade, hummus, tzatziki, you name it!  And if you want to make your next aperitif that little bit more fancy, add these easy homemade crackers to a cheese board alongside a good glass of wine! Enjoy!

SESAME & FENNEL SEED CRACKER’S

225g of plain flour

½ teaspoon of baking powder

¾ teaspoon of salt

3 teaspoons of black sesame seeds*

3 teaspoons of sesame seeds*

3 teaspoons of fennel seeds, ground*

2 tablespoons of extra virgin olive oil + more for glazing

120ml of water

1 teaspoon of lemon juice

Fleur de sel

Freshly ground pepper

Preheat the oven to 220°C.

Add the flour, baking powder and salt to a large bowl and mix until combined.

Mix in the sesame and ground fennel seeds.

Pour in the oil, water and lemon juice. Stir with a spoon and then knead for a couple of minutes until fully incorporated.

Roll the dough into a ball and wrap in cling film. Leave to rest in the fridge for 20 minutes.

Lightly flour a clean surface. Flour a rolling pin and thinly roll out the dough into a rough rectangle shape.

Cut the rectangle into even strips of dough. Option : leave the dough strips as so for long flatbread crackers or cut each strip into 2-3 smaller bite-sized pieces.

Place the dough pieces on a baking tray lined with parchment paper. Pierce each piece lightly with the tip of a fork at regular intervals.

Brush each piece with olive oil and sprinkle over with Fleur de sel.

Bake in the oven 8-10 minutes, watching carefully, until lightly golden.

Remove from the oven and leave to cool before serving or store in an airtight container for up to 2 weeks.

Notes: *Play around with different ingredients & flavour combinations. All sorts of nuts, grains, seeds, dried fruits, aromatic herbs & spices would pair perfectly with these easy flour crackers.
