Nectarine & Berry Filo Parcels
Ever wondered what to do with that extra filo pastry lying around in your fridge? I just might have the answer for you: Nectarine & Berry Filo Parcels.
These fragrant little bundles are filled with warm & juicy Summer fruits. Encased in a delicate and flaky outer-layer, their presentation adds an element of surprise, that’s sure to bring a smile to everyones face. What’s more, they can be adapted to your sweet or savoury needs!
Craving cheese? Why not try some goat’s cheese with figs and pecan nuts, or a dollop of whipped ricotta and honey. Are fish & seafood a part of your diet? Give curried shrimps or smoked salmon with dill a go. And if you prefer to keep things on the sweet side, don’t hesitate to have a play around with the fruits that are in season.
Simply add your filling of choice in the center of the filo sheets, seal the parcels by gathering the corners together, bake in the oven until golden and enjoy!

NECTARINE & BERRY FILO PARCELS
2 ripe nectarines
100g of berries*
8 sheets of filo pastry
1 teaspoon of butter**
Cooking twine
Preheat the oven to 180°C.
Wash and dry the nectarines and berries.
Slice the nectarines into small pieces and the berries in half.
Cook the nectarines on medium heat, in a pan, for 2-3 minutes.
Unfold the filo pastry and cut each sheet in half.
Brush two pieces with butter** and place one on top of the other slightly staggered.
Place some nectarines and berries in the center of the sheets.
Gather up the corners of the pastry over the top and scrunch them together.
Tie a knot with the cooking twine to seal the filo parcels.
Repeat with the remaining filling and filo pastry.
Place the filo parcels onto a baking tray lined with parchment paper.
Bake in the oven for 12-15 minutes, until flaky & golden-brown.
Remove the filo parcels from the oven and enjoy warm with a spoonful of ice cream or some yogurt.
Notes: *Have a play around with different berries - I used raspberries, blueberries & blackberries.
**You can replace the butter with a dairy free alternative (e.g: margarine) or with olive oil.
