Chickpea Hummus
All throughout the Summer months, our family home in the South of France sees friends & family come & go. Lots of laughs, great company & delicious food all around is what makes these moments so special. And of course, let us not forget, one essential ingredient, that truly makes it feel like Summer: the famous French apéritif!
I like mixing it up & trying new recipes & flavours combinations, to keep things fun & fresh, but we all know a good classic dip is where it’s at! They’re quick & easy to make & work like a charm every time! Smoky Aubergine Dip, Roasted Red Pepper Dip & the all-time classic Chickpea Hummus are my go-to trio when looking to impress my guests.
No mezze is complete without the all-time classic Chickpea Hummus! Creamy, satisfying & packed with plant-based protein, it’s simply a no-brainer! Enjoy!

CHICKPEA HUMMUS
250g of chickpeas
2 tablespoons of tahini (sesame paste)
Juice & zest of 1 lemon
4 tablespoons of cold water*
2 tablespoons of extra virgin olive oil
Fleur de sel
Freshly grated pepper
Add the peeled chickpeas, tahini, lemon juice, lemon zest and water to a mixer. Mix on high for a couple of minutes, or until mostly smooth.
Add the olive oil in a slow stream, while blending, until incorporated.
Season with salt and pepper and blend on high until the hummus is completely smooth.
Reserve in the fridge until ready to serve.
Notes: *Add water for a smoother hummus.
