As 2020 is coming to a close, I thought I might share a little something sweet that all of my loved ones have been requesting for quite some time now. So here it is, my Christmas present to all: my famous Chocolate & Hazelnut cookie recipe!

These indulgent cookies are filled with the nutty flavours of hazelnuts and ooze with melting chocolate. Bonus: they do not contain much sugar inside! So put on your aprons and get into that festive spirit with your loved ones by baking or simply devouring these delicious cookies together! There doesn’t seem like any better way to finish off this crazy year than with a little something sweet and comforting.

CHOCOLATE & HAZELNUT COOKIES

115g of salted butter

50g of brown unrefined sugar

1 egg

180g of all-purpose flour

1 teaspoon of corn starch

1 teaspoon of baking powder

150g of dark chocolate (approx. 70%)

75g of hazelnuts, toasted*

Preheat the oven to 200°C.

Cut the butter into small pieces and place in a mixing bowl with the sugar. 

Mix together until a smooth dough starts to form.

Add the egg into the bowl and continue mixing until incorporated.

Once incorporated, add the flour, corn starch and baking powder and mix with a wooden spoon until fully incorporated, then set aside.

Roughly chop the chocolate and hazelnuts and mix them into the dough mixture.

Scoop out roughly 20-25 balls of dough (depending on size of cookies you desire) using an ice-cream scoop and place them onto a baking tray lined with parchment paper.

Gently flatten the top of the cookies and add a couple of grains of fleur de sel on top.

Bake in the oven for 8-10 minutes, until golden.

Remove the cookies from the oven and let cool at least 10 minutes before serving.

Notes: *You can sub. the hazelnuts for almond, pistachios, nuts or any other sort of grains and/or seeds to your taste.
