Oats with Honey Roasted Pears
The last day of October is upon us and with that comes the arrival of many festivities just around the corner: Halloween, Thanksgiving, Hanukkah, Christmas, St Nicholas, Boxing Day, New Years Eve (I might be getting a little ahead of myself here). But nonetheless, we have exiting and cheerful days filled with family, friends and endless activities, to look forward to!
With schedules being plentiful, it is crucial to start your day-off right with a warm and tasty breakfast! These Oats with Honey Roasted Pears will keep you going all morning long, plus it not only looks great, but tastes amazing too!

PORRIDGE OATS
60g of rolled oats*
100ml of almond milk**
75ml of water
Add the oats, almond milk and water into a pot and cook on medium heat. Bring to a boil and then turn down the heat.
Continue stirring until the mixture thickens (it will continue to do so as it cools down) and transfer to a bowl.
Notes: *You can sub. the rolled oats for a gluten-free version if that is a part of your diet/ your personal preference.
**You can sub. the almond milk with any other dairy alternative.
HONEY ROASTED PEARS
2 ripe pears
Juice of ½ a lemon
2 teaspoons of raw honey*
2 sprigs of fresh thyme
Handful of slivered almonds, toasted
Preheat the oven to 200°C.
Wash and dry the pears. Cut them in halves leaving the stems and remove the seeds from the fruit.
Place the pears facing upwards onto a baking tray lined with parchment paper.
Top each half with the lemon juice & raw honey.
Bake in the oven for 15-20 minutes, until soft and turning golden.
Remove the pears from the oven and add to the bowl with the oats.
Top-off with a couple of fresh thyme leaves and a handful of toasted almond slivers.
Notes: * You can sub. the honey for some maple syrup or agave syrup.
