Courgette Tatin
When the weather gets hot, it is essential we remain well hydrated! Drinking water, fruit juices, tea or coffee, help keep our bodies hydrated. But little did we know that around 20-30% of the fluids we consume come from food - e.g: soups, veggies & fruit (read all about hydration here). Courgettes, are amongst the most water-dense veggies (95% water), making them the perfect addition to your Summer diet - on top of the fact that they are absolutely delicious!
In my household, courgettes are a must during summertime! I enjoy finding new & fun ways to prepare them. My most recent discovery was these easy & delicious Courgette Tatin’s. Ready in under 30 minutes, all you need is some ready-made shortcrust pastry, a couple of courgettes & some honey. Easily adaptable, you can play around with different add-in’s based on your mood & what you have in your kitchen. I like adding a bit of pesto inside & topping it all off with some creamy burrata, a couple of toasted pine nuts & fresh basil. Enjoy!

COURGETTE TATIN
4 tablespoons of honey
2 courgettes
4 teaspoons of pesto
1 shortcrust pastry
2 teaspoons of sesame seeds*
1 burrata
2 tablespoons of pine nuts, toasted
Handful of fresh basil leaves
Fleur de sel
Freshly ground pepper
Preheat the oven to 210°C.
Wash and cut the courgettes into thin slices.
Heat a drizzle of olive oil in a pan and sauté les courgettes for 2-3 minutes - they should remain a little crunchy.
On a baking sheet lined with parchment paper, drizzle circles of honey.
Add the thin courgette slices overlapping one another, on top of each honey circle. Spread a teaspoon of pesto on top of each courgette circle.
Cut the shortcrust pastry into 4 equal pieces and place them over the courgettes circles. Prick the dough and bake in the oven for 15-17 minutes, until lightly golden.
Remove from the oven and leave to cool slightly before turning the tatin tartelettes over.
Once turned over, sprinkle over with sesame seeds and season with Fleur de sel & freshly grated pepper. Top with creamy burrata, a pinch of toasted pine nuts & some fresh basil leaves.
Notes: *You can sub the sesame seeds for any other type of small seeds or dried herbs - e.g: poppy seeds, linseeds, oregano, herbes de Provence, etc.
