A Green Christmas (2021)

One thing I love about the festive season is the traditions we have built over the years. 

  • we all cosy-up in our Christmas jumpers for a joyful start to the day

  • my father brings out his Rudolph tie that lights up & sing’s at the touch of a button (the sound has faded over the years, but he insists on wearing it)

  • we leave our slippers or shoes at the bottom of the tree for gifts

  • we sing together before unwrapping presents one by one (a slow but magical moment), cherishing the look of joy in everyone’s eyes

  • & finally, we gather with family & loved ones around a delicious and warming home-cooked meal

This year’s 'Green Christmas 2021’ menu is filled with flavoursome & unexpected recipes to delight all of your guests’ tastebuds without having to spend hours in the kitchen: more time to celebrate & enjoy the company of loved ones.

Simple and good ingredients make for the best recipes & it is without a doubt the case with these Hasselback Apples. Firm and crisp red apples are finely sliced & roasted in the oven. Plated atop a swirl of dairy-free yogurt & garnished with some toasted & crushed hazelnuts, they make for a decadent-tasting yet healthy conclusion to this festive menu.

- Vegetarian Recipe -

 
 
 

HASSELBACK APPLES

4 firm & crispy red apples*

25g of butter**

1 tablespoon of Mixed Spice

80g of hazelnuts, toasted & crushed***

120g of dairy-free yogurt****

Flaky sea salt

Preheat the oven to 180°C.

Wash and dry the apples. Cut them in half vertically and core them.

Place them cut-side down and cut slits about 2/3 into the apples, across the width, leaving the bottom intact. Leave approx. 2mm between each slit, to create a fan.

Place the apples onto a baking tray lined with parchment paper.

Melt butter in a small pan, over low heat.

Brush each apple with the melted butter and sprinkle with the mixed spice. Add a pinch of flaky sea salt on top of each apple.

Bake in the oven for 15-20 minutes, until golden.

Remove the hasselback apples from the oven and plate individually on top of a swirl of dairy-free yogurt. 

Garnish with a handful of toasted & crushed hazelnuts.

Notes: *Use firm apples (e.g: Pink Lady apples).

**You can sub. the butter for any dairy-free alternative (e.g: margarine, ghee, etc).

***You can sub. the toasted hazelnuts for almonds, nuts or any other grain/ nut to your taste.

****You can use any sort of dairy-free yogurt (e.g: soy, coconut, almond, etc) or dairy yogurt to your taste & diet.
