Courgette & Goat's Cheese Crumble

 
 

Looking back on some of the recipes that I have shared here on Grain(e)s & co., I realised there were quite a few featuring courgettes as the main ingredient: stuffed & roasted, in a carpaccio with fennel, as a raw & vegan alternative to spaghetti or even ribboned on skewers for a little barbecue fun. 

With countless ways to enjoy courgettes, I thought I might add one more to the list. This week’s recipe showcases this wonderful green vegetable in the form of a Courgette & Goat’s Cheese Crumble.
