A Green Christmas (2021)

One thing I love about the festive season is the traditions we have built over the years. 

  • we all cosy-up in our Christmas jumpers for a joyful start to the day

  • my father brings out his Rudolph tie that lights up & sing’s at the touch of a button (the sound has faded over the years, but he insists on wearing it)

  • we leave our slippers or shoes at the bottom of the tree for gifts

  • we sing together before unwrapping presents one by one (a slow but magical moment), cherishing the look of joy in everyone’s eyes

  • & finally, we gather with family & loved ones around a delicious and warming home-cooked meal

This year’s 'Green Christmas 2021’ menu is filled with flavoursome & unexpected recipes to delight all of your guests’ tastebuds without having to spend hours in the kitchen: more time to celebrate & enjoy the company of loved ones.

Some ingredients were made to be paired together & it is definitely the case in this Whipped Ricotta with Roasted Squash recipe. Topped with different varieties of roasted squash, the whipped ricotta base is garnished with a swirl of olive oil and a mix of herbs & spices. The perfect hassle-free and mouth-watering entrée to start-off the festivities!

- Vegetarian Recipe -

 
 
 

WHIPPED RICOTTA & ROASTED SQUASH

3 small squash*

450g of ricotta cheese

2 tablespoons of dukkah**

2 tablespoons of olive oil

Fleur de sel

Freshly grated pepper

Preheat the oven to 180°C.

Wash and pat dry the squash.

Cut the squash in halves & discard the seeds. Cut them into 1.5cm thick slices.

Place the slices onto a baking tray lined with parchment paper.

Add the olive oil and season with salt & pepper.

Bake in the oven for 20-25 minutes, until soft and turning golden.

In the meantime, whip the ricotta in a bowl & season with salt & pepper.

Remove the squash from the oven and cut into small pieces.

Place the whipped ricotta into a serving dish and drizzle with olive oil & a handful of dukkah.

Garnish with the squash & top-off with a handful of dukkah.

Notes: *Play with different varieties & colours of squash for more depth of flavour.
